Turck MMCache and ionCube PHP Accelerator are now discontinued, although it is still widely used. APC and eAccelerator are stable and actively maintained. I would recommend them.

how many scripts? lots of random ones (many vhosts) or a few primary ones? if just a few you really want to get them in ram asap. if a lot, use one of the pre-compiling solutions at a minimum.

We've been testing out APC and it's been very smooth. APC will also be bundled with PHP 6.
